Saffron: the red gold
Saffron is a spice from the Crocus Sativus plant which grow about 20-30 cm and produce up to 4 flowers each one with 3 pistils of intense crimson color. Spez team harvest and dry stems and pistils; this very precious spice probably originates in Greece or Asia minor (nowadays turkey), even if there is an Assyrian’s botanic report from VII centuries B.C.
The quality of Spez
Spez is taking care of its product through the entire production cycle to guarantee maximum quality:
- Spez selects the plot to grow the flower trough their technical expertise;
- Spez implements an optimal cultivation rotation cycle to always obtain the best quality product;
- Spez handpicks the three pistils before noon to make sure the flower does not wither;
- Spez only does natural drying;
- Spez differentiates form other producers as it use only the top part of the pistils which is the more red in color;
- Spez grounds the top part of the pistils only by traditional way using ceramic jars to maintain a low temperature during the process to guarantee the organoleptic properties of the saffron.
Therefore thanks to this processes the final product is of an intense red color and perfume.
