Rossi Fresh Pasta Factory

The Modena-based “Pasta Fresca Rossi” (Rossi Fresh Pasta Factory) has since 1955 produced fresh, top-quality, traditional rough-surfaced  bronze wire-drawn pasta.

The Pasta Factory produces true Modena tortellino, Classic tortellino, cappelletti Emiliani and with raw ham, tortelloni (yellow or green) stuffed with ricotta and spinach or pumpkin, ravioli with braised meat, passatelli with parmigiano reggiano cheese, maccheroni al pettine, gramigna.

The Modena tortellino

A small square of egg pasta stuffed with pork loin meat, raw ham, mortadella, Parmigiano Reggiano cheese, salt, pepper and nutmeg has always been the emblem of the culinary tradition of Emilia. Here’s the tortellino folded and carefully twisted upon itself!

The production specification for the Modena tortellino calls for PDO Parmigiano Reggiano cheese, aged over 18 months, raw ham, PGI mortadella and other top-quality ingredients to be used in the stuffing. The use of breadcrumbs is strictly forbidden.

Organic pasta and vegan pasta

In recent years the Factory has also started to produce organic pasta and vegan pasta, such as kamut tortelloni or wholewheat ravioli filled with ricotta and spinach and delicious recipes such as ravioli with soybeans and tofu sprouts, tortelloni with chickpeas and ginger or with millet, spinach, tofu and seitan; chickpea ravioli with potatoes and rosemary, ravioli with 100% vegetable red lentil dough with tofu and tomatoes, pea ravioli with carrots and vegetables.
