Genoese Pesto with Genoese Basil DOP

The Pesto genovese is the “sauce” which better represent the Ligurian tradition. Its recipe is simple and precious at the same time: it is a raw sauce that preserves all the flavor of its ingredients. To make it, you have to crush Genoese Basil DOP leaves, pine nuts and garlic, all seasoned with Grana Padano, Parmigiano Reggiano, Pecorino and olive oil.

The first pesto sauce dates back to Roman times, while the first official recipe dates back to the nineteenth century, although it certainly draws inspiration from older sauces already widespread in Liguria during the Genoese Maritime Republic.

The Portofino Fine Food sauces secret is simply contained in its ingredients, all of them are of the highest quality available, and for this reason we’ve decided to sell them also “in bulk“: pine nuts, walnuts, dried tomatoes. These ingredients together with our recipes, are the factors of our success, the true ambassadors of our quality.

Also in the recipe of our Genoese Pesto with Genoese Basil DOP we find 3 DOP cheeses: Grana Padano, Pecorino Romano, Parmigiano. In the “Pesto Santa Margherita” recipe, however, you always find Genoese Basil DOP, and also Grana Padano, and pine nuts, and in the Red Pesto we also add 21% of Mediterranean dried tomatoes.

The long-life Portofino pesto is not pasteurized to preserve its quality, taste and organoleptic properties; only by using this fundamental caution can the bright green color and intense aromas be maintained despite the fact that this product has a 12-month shelf life.
