Cooked ham:
Classic, smoked, grilled, with herbs and in bread crust
Salumificio Dentesano‘s distinctive feature is the use of fresh pork thighs that would normally be used for the production of San Daniele Ham to create cooked hams. Following the almost forgotten traditional way the thighs are injected with a secret recipe brine right into the femoral artery and then cooked in bread crust or slowly smoked with beech wood, grilled or with the addition of herbs or high-quality black truffles.
All cooked hams are also available with bone, perfect for hand- slicing on a carving stand.
Gourmet specialties of Salumificio Dentesano
This Friuli Salami Factory also produces excellent duck à l’orange, a cooked coppa (called “porcina”), an extraordinary beef shank baked with beer, 360 grams fixed weight MAP truffle salami, spicy salami and wild boar salami. Besides the factory also produces the typical frankfurters that are still called “gourmet sausage” like Cragno, Servelade, Vienna, Weisswurst frankfurters.
Quite remarkable is also their salami with and without garlic, a typical Friuli tradition, produced with certified fresh meat packed in natural gut and in some cases still cut by hand.
