In the Valtellina area Bresaolificio Paganoni produces classic PGO Bresaola Punta d’Anca and also seasons Bresaole of over 6 kilos made with top-quality fresh meat such as Garronese, Limousine, Tuscan and Piedmontese Chianina. Its production line includes also Vestis, the only low-salt Bresaola and Primitiva (an organic preservative-free product). Meat is the most important part of the product: Gran Bresaola and Rosa delle Alpi are only made with fresh, non frozen European meat.
In general, animals are bred in France in semi-wild state and are characterized by big dimensions. The Punta d’Anca cut (the most prized for Bresaola) is processed whole to produce Gran Bresaola, thus guaranteeing its extraordinary size of 6 kg or more.
In order to produce Rosa delle Alpi some parts of the same cut are removed, thus getting the so called Punta d’Anca Heart, a slightly smaller product which however guarantees unparalleled quality levels.
For the most demanding clients Bresaolificio Paganoni also produces Chianina and Piedmontese-meat bresaola, certified by COALVI (Piedmontese breed protection Consortium).

Gran Bresaola was awarded the Gambero Rosso Award for best bresaola in Italy. Paganoni PGI Bresaola was the winner of best PGI Bresaola Award given by the Espresso prestigious guide. Both awards are available to be displayed in restaurant menus or to be shown in gourmet shops.
