To explain Tino Paiolo production, basically we could use three words: mountain, short supply chain and animal welfare. But we trust he deserves to be known for his passion, skills and his Italian pride.
La Bruna (Tino Paiolo – Fattorie di montagna) is a farm based in Valgrana, Cuneo province, with three livestock farms of Bruna Alpina and Pezzata Rossa breeds. Tino Paiolo feeds their 240 animals with local fodder and with high quality cereals without the use of silage only. Herd produces no more than 25 liters of milk per day. This very high quality milk is exclusively reserved to their own cheese production. During the summer caws graze in the Alpeggio (where the fabulous cheese Castelmagno DOP di Alpeggio is produced).
Everything comes from the top quality feed: upstanding cereals, local hay and grass from grazing land. The raw materials allow the producer to get high quality and exceptionally genuine cheeses characterized by a taste that keeps the flavor of the pastures unchanged. Milk is processed raw so that the organoleptic characteristics stay unchanged. The short chain (feeding, milking, milk transformation and improving) is the guarantee of a careful supervision at any production step. Special attention is reserved to improving process: production is stored into a cave, on fir tree boards, and kept at a naturally stable controlled temperature.
